Roasting transforms the bean both physically and chemically: as moisture is driven off, the bean loses weight, expands in volume and becomes less dense. As the bean temperature climbs towards about 200\u202f\u00b0C (392\u202f\u00b0F), internal water turns to steam, pores open, and the structure expands. Beans lose weight as moisture leaves yet increase in volume, so density drops. This change in density influences flavour development, extraction strength in the cup, and even how many grams of coffee can be packed into a fixed-volume capsule or bag.&nbsp;<\/p>\n    <\/div>\n    \n\n    <div class=\"container-xl\">\n\t\t\n<p class=\"wp-block-paragraph\">Inconsistent incoming moisture makes roasting harder to control. If one lot of green coffee arrives at 11% moisture and the next at 13%, but both follow the same heat profile, one batch may end underdeveloped while the other risks tipping or scorching. Inline moisture measurement before roasting lets process engineers understand how much energy is needed to reach the same end state and adjust profiles accordingly.\u00a0<\/p>\n    <\/div>\n    \n\n    <div class=\"container-xl\">\n\t\t\n<p class=\"wp-block-paragraph\">Downstream, moisture continues to matter. Roasted beans can gain or lose water during cooling, silo storage, and transfer, especially in environments with variable humidity. Without monitoring, moisture drift can go unnoticed until lab checks reveal a problem, by which time multiple batches may be affected. Continuous measurement after roasting helps teams spot changes quickly and maintain tighter process windows.&nbsp;<\/p>\n    <\/div>\n    \n\n    <div class=\"container-xl\">\n\t\t\n<p class=\"wp-block-paragraph\">Grinding adds another variable. Breaking beans into fine particles changes surface area and can influence both how the material holds moisture and how it flows. Ground coffee that is too wet may clump, dose inconsistently, and compact unpredictably in pods, while product that is too dry can create dust, segregation, and packing voids. Moisture checks after grinding give early warning of these behaviours and help maintain fill-weight and extraction consistency.&nbsp;<\/p>\n    <\/div>\n    \n\n    <div class=\"container-xl\">\n\t\t\n<p class=\"wp-block-paragraph\">Finally, accurate moisture data before packaging is essential for shelf life and compliance. Too much water encourages staling reactions and can shorten the product\u2019s usable life; too little can reduce sensory quality or cause over-roasting during production.
